So many to choose from! 

I really love the Graflex and variants of it as it was the first lightsaber seen on screen (and consequently cemented my love of Star Wars at 5 years old).

I really love the Luke V2 and Obi-Wan hilts (OT) for the grip, thin neck (which gives it an elegant look with the wider blade) and the rounded emitter.  The cubed pommel rounds the look out as well.

I also enjoy the Obi-Wan TPM.  It's just a very clean design with a really comfortable grip and a nice balanced color scheme.

As far as Vader sabers go, my absolute favorite is the Barbican Stunt as it features the MPP clamp and a really slick looking angled cut for the emitter.

Consequently these will be the ones in my collection once I get building again.

I also like the Anakin AOTC, Qui-Gon, Darth Maul.

To a lesser extent I also enjoy the Clan sabers.  (Adi-Galia, Ki-Adi Mundi, Eeth Koth)  Jedi council members saber hilts.

I'm personally not too keen on custom sabers for myself, as the one's I've made for myself I was never really happy with.  But there are some amazing custom sabers I've seen people make over the years.

I second the Vader hilt.  No bunny ears to snag on things.  I'm planning 2 vader-esque sabers.  neither will feature t-grips.  I guess t-grips are ok, if you have robotic limbs, as anakin did after his pruning.

I'm right there with you dude. Vader is pretty awesome.

Although, my favorites ary depending on mood they kinda sorta go like this:

1. Luke ANH
2. Obi Wan ANH
3/4. Vader ANH, Luke ROTJ Hero and V2 are inseparable for me here.
5. Luke ESB
6. Vader ESB
7/7. Qui Gon and Obi TPM
8. Anakin AOTC
9. Ahsoka Tano
10.  Vader ROTJ

After that its all equal billing for the other canon and EU sabers.

I really like Ahsoka Tano's shoto. The yellow green one.  From what i can tell {because finding good pictures of it are hard} It looks very similar to her standard saber just a little smaller of a hilt.  The pommel looks a little different also no black ring around the end. 

I also like Anakin AOTC. 

But lets face it, i would take anyone if it was offered to me. Everyone of them stands out in some amazingly unique way.

My top 3 personal favorite sabers are:

1. Anakin Skywalker AOTC
2. Dooku
3. Ahsoka Tano

There are a couple sabers that I can't stand though. I'm really not a fan of Darth Vader's ROTJ saber nor am I a fan of Darth Maul's saber. I mean, I do like double bladed hilts just fine, but to my eye, his saber just looks really bland.

1. Luke ROTJ (V2 over V1 but I love both of 'em)
2. Obi-Wan TPM/AOTC (let's face it: who doesn't like it?)
3. Luke's Graflex (ESB version with yellow cardboard and different grips is the best Graflex saber IMHO)
4. Obi-Wan ANH/ROTS (I like both the clean and the dirty/rusty version)
5. Qui Gon (very elegant and sturdy)

Agreed, the Hasbro FX Dooku is just too damn thick.  I was tempted to commission getting a screen-accurate version done with full CF sound and FoC, but the newest family arrival shot those plans down :(    However, if any saber smith ever decides to do a screen accurate Dooku batch run, I'll be among the first to sign up.

Edit: As far as personal favorites go...

1) Galen Marek Starkiller from TFU1 - that exposed crystal chamber is really something to behold :)   I'm hoping VV does a 3rd run, but who knows...
2) Obi TPM - One of the most popular styles, especially the screen-accurate versions (Hasbro FX is a bit thick too).
3) A screen-accurate Count Dooku with sound + FoC, but unfortunately I have to settle for the Hasbro FX sewer pipe :(
4) Darth Maul double saber-staff.  BTW, does anyone know how the older MR version compares to the current Hasbro FX version size-wise?
5) Standard Graphlex style sabers
